Indeed, we still use Demon (via POP3 collection) for our email, although
that is 'soon' to be moved to BT.

recall,

I can pick up mail from Demon in either smtp or pop3 flavour. The problem I
see, is configuring the Qube2 to pick mail up from an smtp server as opposed
to the pop3 server it wants to see :| I've tried entering the smtp info on
the admin webpage, but complains that if cannot get authenticated, then
reverts the mail server address back to the pop3 one.

I've had a 'little' look around the various config files, but I'm not that
confident I know which ones need changing to perform the task I need :(

Indeed. I've setup a temporary list server with eGroups, just to get some
'spammy looking' mail coming down the wires, with an invalid To: address
(but correct stripped envelope-to addy), so I can perform some tests. As
you would guess, the mail currently is going through the admin account, as
you quite rightly said, Demon are stipping the envelope-to header from the
mail by the time it hits the pop boxes....

I'm trying to get in touch with Demon to see if they can temporarily change
their configs for our mailbox, so that the envelope-to header is not
stripped. Getting through on their helpdesk number is like getting the
proverbial from a rocking horse :|

Nah, nah, nah... not something I want to get into...

I'm trying.. honestly ;)

Heheh.. tell me about it...

Indeed you have, thanks ever so much...be rest assured I'll be back..LOL
