We use the Cobalt Migration Utility for these kinds of moves. Quick and
easy. (Well, not really quick, not for 200 virtual sites, but easy.)

There is a way to change the DNS settings for a site when using CMU; I
forget how to do it, but I know it can be done; perhaps searching the
archives will find you the answer.
That's only one of the stpes. The other step is to change the pointers
in the DNS system. If you're hosting your own DNS the easy way to do it
is to copy over the /etc/named/records file from the old box to the new,
and then make global search-and-replace changes, and then restart the
nameserver by clicking on "Save Changes" in the gui control panel for
the nameserver.
