Well I'll take a guess at it...

Since I don't know the domain I can only guess...  However even though I am
a consultant too these days I was raised to help the "church" and to expect
to pay for dinner.  So if you stop on by my site and click on the "live
person" link we can chat and I will do my best to fix it for free.

Now without a domian name to check, my guess is that you have setup your dns
with 2 mx records and they both point to the same box and you never entered
an alias for the secondary.  So then with internet weather, mailers, etc.
when the secondary mx record becomes important your server dosen't "relay"
for it.

Well thats my guess.  feel free to stop on by an i'll be glad to look into
it more.
