You should not have to make any manual amendments to the local-host-names file unless you see this problem again. There is an "Accept mail for this domain" checkbox in the GUI which will tell sendmail that it should treat mail for the domain as local.
I'd welcome an explanation or pointer to an explanation as to why this happens with sites on a single IP but not on sites with a unique IP. Or any other relevant information. If it'd be more appropriate off-list please feel free to email webmaster (care of) artejano.co.uk :-)
It could have been a user error. :) If anyone else experienced the same issue with sites are on a single IP, we would surely have read about it on this list. I am replying to the list as it may help the people who read the mail archives.
