I suppose you could *not* give them the info they'd need to set up
their email account on Outlook or whatever; and hard-code this
information into the scripts on the site so that they don't have to
put it in themselves.
Disabling POP3 comes to mind, but I have not felt the urge to do that
yet so I don't know how. Perhaps someone else can tell you.
