For the end user there's no difference at all.
Unless you *tell* them that it has Raid mirroring, and they like/want
that for some reason. But they still get the same interface and
everything.

Yes. The RAID disk mirroring is good if the main hdd fails for any
reason - which they sometimes do. Again, the end-users see no
difference.
If you don't want RAID, you may as well go with an "i" and just get a
lot of RAM added in.

The "i" or "r" isn't much different. The "r" set comes standard with
more RAM generally (256MB, but this can be changed by whomever you're
hosting with), dual hard drives and the RAID option in the Control
Panel. Physically it will also weigh about two more pounds, due to the
second hdd. Other than that, it's the same as an "i".
