One method, I haven't tried, would be to point a sub-domain of your domain
to that directory via an "include.conf" file. Then the customer could go to
customername.yourdomain.com to view their site.

No. What's the problem you see? As long as it doesn't exceed the max for the
site, they can all have files. If the user puts in 50MB of files, the site
admin will only be able to add 25MB. (Actually a lot less because of logs.)
