Well, how easy it is depends on how experienced you are with Linux (and
Cobalts ofcourse).

If you want a good GUI -- buy Cobalts!

The Restore CD gives you a clean system -- without customer data. Then you
could have backups of customer data.
The best thing is to use a normal tape backup system (or similar) - and have
daily backups of your full system.
