Changing the machine's IP won't harm the virtual sites.
However, if this IP change affects your name servers, you've got to go to
your registrar and update the IPs for your name servers.
If you had sites on the machine that had their own IP, then you might need
to change those - depending on if you could take those IPs with you to your
new host or not (portable).

Changing the IP for the NIC in the GUI does just that - it changes the
settings for the NIC.  The virtual sites aren't served up by IP, they're
dictated according to your DNS and your httpd.conf.  (Again, unless they've
got their own dedicated IP.)

Note: This is the general gist of what goes on. For more technical
explanations that are bound to get you confused and worried that you're not
doing something right, sending you off to research this more technical stuff
and in turn making you forget what you were originally searching for, see
someone else.
