I assume that since you are going to remain the host, the IP address of the
web site will remain the same. If this is the case, you can retain DNS on
your server as long as you want without affecting the hosting of the site.
What I would do is verify that the new DNS people have everything set up,
and then wait about 2 or 3 days for DNS worldwide propagation before
deleting DNS entries on your server.
