how do you go about doing this without the GUI? IE: setting up sites, dns

Very carefully <smile>.
You start by getting lots of Linux experience. And clue. You read a lot
of Linux books, hopefully based on Linux 5.2.
When you think you know enough, you start out with an offline system,
because it's easy to mess it up. If you use a Cobalt product for this, you
make sure you have a restore CD. You can also use an old 486; even an old
386, if you want, but you should get a copy of Red Hat Linux 5.2 from
somewhere (I suppose I can put a bootable CD image file on an anonymous FTP
area if someone needs it and can't find it.
Pretty much, if you have to ask, you shouldn't do it.
