how do you go about doing this without the GUI? IE: setting up sites, dns
etc..??

nope they don't.

Basically the figure is around about what the GUI will hold until it starts
falling over.

A couple of webmasters have over 500 clients on their server (all though
this is not
recommend..resources starting to get pretty thin), but it's all managed
without the gui.
