They have a poor partition schema (as you call it) for anyone who hosts
a few thousand email addresses that get a lot of spam, for anyone who
has a high turnover in email addresses (for example, an ISP), etc.,
because the logs fill up /var quite quickly.

In fact they have a poor partition schema for anyone who uses email at
all; that's why they (early in the game) realized they needed to
symlink /var/spool/mail to /home/spool/mail.

We can fix many of the problems, yes, by symbolic links, but that
doesn't change that it's still a poor schema.

The question would be "does it mount early enough so everything that
needs to get started at boot time that's in /usr get's started. I've
never checked to see if there's anything in /usr that even gets started
by startup scripts, so I'm not sure. That would be what to look for.

The other problem with symbolic links occurs when you use tar to backup
whole directory trees or whole partitions.

And putting mail and /var/logs into /home (for example) is NOT a good
idea; it can (and does on older RaQs) often result in /home being
filled.

Also, the lack of a /tmp partition is the specific reason why your
clients with 20 meg mailboxes (for example) filled above 10 meg call
you when they can't download their email.
