I've been in the same boat and I fooled with Max/Min servers and Spare 
server settings in Apache but it didn't seem to fix it.
It used to happen to me once every 4-7 days or so. Sometimes it would be 
down for 5-10 min but once or twice at night it was down for an hour or so.

It's been stable now for a few weeks but I'm still not sure why. There are 
plenty of people in the sun online forums talking about this same problem.

FYI I've now got the following settings in my httpd.conf:

MinSpareServers 30
MaxSpareServers 75
MaxClients 502
MaxRequestsPerChild 10000
