Because the A record now points to an external IP address, and the MX record
points to this new domain name, you need do nothing else on your cobalt.
However, the exchange server needs to be configured to accept mail for this
new domain name, otherwise all mail will just get bounced. This bit I can't
help you with I'm afraid, I'm no exchange expert - but I know it can be done
as we have this exact setup with one of our clients.
