If they are each a separate virtual host on your server, then yes.
Mail will be accepted for user@xxxxxxxxxxxxxxxxxxx,
user@xxxxxxxxxxxxxxxxxxxx, etc. Hostname is important!

Correct. Only one mail server can be designated to receive email for
the "main" domain of domain.co.uk

No. Each vsite is set up by default to answer only for
user@xxxxxxxxxxxxxxxxxxxx if you want user@xxxxxxxxxxxx, _that_ would
be what you would add in the mail server alias field.

So mail.domain.co.uk will accept mail for any
user@xxxxxxxxxxxxxxxxxxxx you can have mail.domain.co.uk specified as
the mail server for multiple hosts; you only then have to worry about
username clashes.
