The short answer is procmail, but the long answer is something I've not
that much experience.  I know procmail is installed as part of CobaltOS,
so it's installed.  I recall from various web pages that it can be called
from within sendmail to filter mail as it is received by the site, but 
I've not enabled this (to my knowledge).  

The other usage would be to run as part of the user's ~/.forward file,
which filters it on a per-user basis.
