it's a fair task I would think, and one that needs careful planning.
you'll need to deal with DNS changes, user directory copies, email move
overs, httpd.conf updates, etc.
I'd suggest sitting down with a pen and paper and plotting the dependencies
quite carefully and consider scheduling some downtime.

PS: Don't forget that DNS takes a while to propagate, so you might want the
sites duplicated for a period of time in order to handle this
