Josh,
Having just one primary and one secondary nameserver is perfectly fine --
there is no reason to "really have at least three". There's nothing wrong
with multiples secondaries, of course.
That said, I have multiple secondaries listed in the SOA for sites I host on
my RaQ3 and RaQ4, and there is no problem adding more than one secondary via
the DNS control panel GUI.
In the "Secondary Name Server (NS) Host Name (optional)" field of the SOA
record form, list multiple secondary nameservers, each on their own line.
I'd be quite surprised if the XTR didn't allow the same.
