If the latter, then you want the field blank, but you do want the RaQ
set to relay mail for the domain, as I mentioned in my first response.

Jeff - Thanks. That's exactly what I needed. I need it to sit in queue on the Raq until the primary (external) mail server is available, so I'll leave the field blank. In an emergency (i.e. Primary server is going to be down for hours) I will populate the Email Server field with 'mail2.whatever.com' and just deal with the 'email staying on the server if originating from the website' issue.
