I realize that is what should be entered for the DNS entry of the
mailserver, but every mail server I have ever used was able to be assigned
that name for that server.
The Cube does not have any type of input to say the email server name is
mail.njsecure.com
I am able to send mail between users on the Cube, and I can receive mail
from external email address, but I cannot send mail out to external address,
these are the headers in my rejected email sent back:

Anything you want, as long as there's an A record for it somewhere on
the internet, pointing to the sever you really want to use for mail.

I'm not sure I understand you. DNS IS where you designate the email
servername.
