If you have physical access to the server...Ghost the drive (or
similar). Copy your entire drive to another drive, remove the original
and perform the 'upgrades' on the duplicate.
You can apply the upgrades and try to fix them on the fly. If things
go badly or clients start to compain you can always 'fix' everything
by replacing the original drive.
