one has to ask why did you buy a Cobalt at all if you don't like the os
flavour or want the GUI a standard 1u chassis would have been cheaper and
more to your liking by the sounds of it.
But since you ask it is possible to install vanilla Redhat on a Cobalt if
you wish but not easy you basically have to use the same method as cobalt
does to build the box namely a bottp server. Even then there are problems
with LCD panel etc.
I do have a pre built os restore CD done by some developer friends at
Navaho. I will try and make any iso of it and make it available for
download but don't hold your breath I have a lot on.
