I'm new to Cobalts and Linux and Im a little confused on how to
setup a MYSQL database for each of my clients, I have looked everywhere
but can't figure it out


A few pointers then, since you missed the most important one (listed first):
1) http://www.mysql.com: check the docs (look at "create database" and the "grant/revoke" statements)! 
2) http://www.phpwizard.net: phpMyAdmin is excellent.
