There is a *nix apps that can do that. It's not free. Sorry, I don't
remember the url. A web search should bring it up.

Sendmail 8.11.x can be compiled with MILTER support and a Milter filter to
do that. There is a Milter filter example to capture email to a file.
There are also some hacks for Sendmail 8.9.3 which can be used to Cc
outgoing mail to a mailbox for monitoring.
It's funny that you ask such a question when you have "This email is
confidential and intended solely for the use of the individual to whom it
is addressed.". :)
