Well here goes.
Thankyou all for your responses.
I had a look at all of the suggestions, and ran test installations on
2 of them;
Squirrelmail

The step by step instructions posted to this list by Chris Calabrese

were absolutely excellent. So excellent in fact that I was able to
copy and paste all the commands straight from his page, and ended up
with a fully functioning installation, working server wide.

What impresses me most about SquirrelMail over the other that I tried
(which incidentally installed equally as smoothly and even worked when
dropped into a frontpage web and published via fp with the small
exception of making the temporary_files folder chmod 777 via the
shell) is that the user does not need to know anything about their
individual mailbox settings ie mail server. All they need to log in is
their server username and password, then once they have set up their
personal settings in the web gui they are ready to roll. This is the
big advantage over the potentially more complicated user login for the
alternative (UebiMiau) where to log in they are forced to name their
mail server name, login username and password, email addy etc.

I didn't try NeoMail, as I have found everything I was looking for in
SquirrelMail (with the exception of that little niggly automatic email
it keeps sending out every now and then)

I've seen in a long time.
