I believe that you should do those changes at the DNS level. Don't worry about virtualusertables. Just add (or modify) the MX record of the dns, so it points to the lotus mail server.

Example;
Let's asume that the IP of virtsite1.net is 111.111.111.111
and the IP of the lotus mail server is 222.222.222.222

Now, set up DNS as this.

#1 virtsite1.net        ->    111.111.111.111
#2 www.virtsite1.net    ->    111.111.111.111

#3 mail.virtsite1.net   ->    222.222.222.222
#4 virtsite1.net mail is sent to the High priority mail server mail.virtsite1.net

Records 1,2and 3 are "A" records.
Record 4 is a "MX" record.
Do not try to shortcut by pointing the "MX" record directly to the server IP. (It won't work).

foo is unknown on the cobalt.

More generally speaking, has someone got some **good** documentation
on the
syntax and rules of the Cobalt Raq3 virtusertable file ?
