Outlook is broken, my friend. Because it does a thing is no reason to
believe that this is the way it should be done.

It's actually in an RFC; I took the trouble to look it up once, then
forgot about it. But Microsoft is above RFC's and the rest of us
apparently should get used to doing it their right way.

No... see above. Microsoft thinks this is better, hence end of choice
for you.

Email (text or HTML) is platform-independent. What your clients use has
zero relevance to what you use... unless again, you're sharing Microsoft
products in which case the few things that make Outlook semi-useful will
only work on Exchange Server... even though they're supposed to need
only email to work.
