Sites and webpages must be world-readable for a
browser to see them, so you shouldn't really limit
them by changing the file permissions.
Check "man bash" to see if the bash shell supports
opening a shell with /their/site/path as the root
directory so they cannot go above it. This, I've
heard, is called a "chroot" as in "change the root
directory of this shell".
Don't know where to find it or how to do it, though.
