According to 'man tar' and well usage thereof, tar does not care
about partitions (remember partitions are just mounted as 
filesystems not different roots like in MS os's) unless you
use the '-l' or '--one-file-system' options.

Multi-volume is for your backup media say if you need to write
to more than one tape / floppy disk / etc.  In short, -M deals
with your destination file not your source files
