Set incoming mail to her site.
Set outgoing mail to ISP SMTP server. As long as the ISP relays it should
work.
We do this with all our customers and it works fine.

I'm confused with the following:
one of my customers has setup her email account so that her incoming pop3
points to her site and her SMTP points to her isp. doesn't work. she cannot
send any email unless she points her outgoing smtp to her site and I
include her ip block in my relay list. I fear spam, so I would like for her
to be able to use her isp's smtp. is this possible? how? what am i missing?
