Hi Jeff,

I have a solution, but it's not sure that it's possible on your
configuration.

First you setup an extra server with a reasonable version of sendmail,
which will not allow relaying.

Get everything set, and then take down the sendmail service on the old
server for 5 minutes. Put up a relaying daemon that will relay all
connections on port 25 to the backup server.

No user will know, that they are actually talking to another
server. No changes in DNS are neccessary.

The backup server will probably have to NFS mount the spool-directory
(or the other way around). Then the old POP-daemon can just do it's
work.
