Yes, each domain must have it's own MX record.  If you're doing DNS for
your domains, then you need it.

It can be something as simple as the line:

domain.com.  IN MX 10 domain.com.

in the zone file for domain.com.

They all do use the same physical mail server, presuming they're hosted
on the same RaQ; you only have one sendmail installed.

You can address it any way you want, but you're responsible for the
address.

You can certainly use:

customersdomain.com.  IN MX 10 mail.mydomain.com.

as long as you have an record for mail.mydomain.com.

The "system" does no such thing.  It's your job.
