Rick,
A possible explanation: If one of the servers responsible for relaying your
mail to its destination is inactive when it comes, then the preceding server
will hold on to it and try again later (maybe 1, 2, 4 or more hours later)
until it succeeds. Your 10pm mail item may have been subject to that sort of
delay, while your 8:10am mail might have got straight through, because the
server was active when it arrived.
