You can turn it off, but the RaQ "heartbeat" monitor that runs every 15 
minutes will turn it back on.

I think it's in the root crontab; you have to run

# crontab -e

as root and comment it out before you stop sendmail, and then run it 
again and uncomment it after you restart sendmail.

Could you automate it?  Yes.  You'll have to modify the 
/var/spool/cron/root file and then stop and restart the crond daemon, 
under script control.

We know our backups may occasionally skip email, but an email mailbox is 
a snapshot in time, and will seldom be useful by the time the backup 
must be restored, so we don't worry about, except to let our clients 
know that restored backups may not catch all their email.
