Your MX records need to be a domain, not an IP. All you should need to
do is create an A record for mail.example.com and point your POP3 to
that. Same for the MX record. But, if mail is getting accepted then it
sounds like your MX is correct. The SMTP would be the same as the POP3.
Relaying by SMTP would depend on whether you allow POP before SMTP or
put the sender's IP in the allowed to relay field. Your IP 81.168.76.189
seems to have no rDNS which you may want your ISP to correct.
