NO.

I would *think* the only
site that would experience downtime would be xyz.com as it updates to the
new IP address.. but I'm not sure..

If you do it right, you won't have any downtime on this site either.

The reason I ask, I setup a customer's web site as the first site installed
on the IP that is also the primary nameserver IP. When you do a nslookup, it
returns the customer's domain name, and the IP address for ns1. It's not
really a problem, but I'm curious if it would be best if xyz.com was listed
at the first site in the records, instead of the first customer on the
box..??

We set up our machine names completely independently of anything hosted on them. It's really up to you, but nslookup should return the name of your nameserver, imho.
