You don't.  An MX record MUST point to an A record.

I tired to edit the record in PICO and it keeps getting overwritten and the
UI does not accept a ip address for a mx record?

It's not supposed to.

If you want to run DNS manually, outside the GUI, you really need to read the O'Reilly book "DNS and Bind" and understand it. Or hire a consultant (says consultant Jeff <smile>).

Or just stick to the gui.
