If you're REALLY a beginner, the 'dummies' books are always valuable for
the first couple of weeks of the learning process.
The Linux book that has done me the most good in terms of server setup,
security, maintenance, etc recently is Mohammed J. Kabir's "Red Hat
Linux Server" (IDG). After finishing the 'dummies' book several years
ago, my next big learning relationship was with the Oreilly "Essential
System Administration", which covers anything and everything Unix in
some detail. If I was only allowed to own one computer book, that'd be
the one.
As far as Apache books... I own the Oreilly 'definitive guide', but
really the only reference I ever use is
http://www.apache.org/docs/mod/directives.html :)
