I don't host with only one IP, but here's what I would do if I did:

My own site, <www.me.com>, would be one of the virtual sites.

My main site would be <clients.me.com>, and would have pointers to all my 
clients hosted on my box.

That way, anyone could go to <clients.me.com>, and see all my clients.  Of 
course I'd need to be proud of my clients.
