lots of questions on those few lines :-)

i assume you are talking about virtual web sites when you say virutal
hosting and that you are using apache as web server. you set this up
in the httpd.conf file.
with regard to DNS you update your maps such that all domains served
as virtual domains resolve to the same ip address.
with regard to mail im am not sure but i don't thing you have to change
anything there. the MTA is usually interested in the domainname and not
the ip address, e.g. which domains are regarded as local.
since you only have one ip address left you can only access one site
via ip address, as far as i remember with apache it will be tha last
site in the list of virtual domains.
