The first sign of madness? Answering your own posts :)
I solved it, running /etc/rc.d/init.d/admserv restart
started the web-based console regarless of whether the main apache server
could start or not. This let me change the IP properly and therefor sort my
problem.
Just in case this is ever usefull to anyone else...
