Perhaps my analogy is not perfect, but I think the main point is that you
should be very careful about blocking mail entirely. Clearly everyone agrees
with this.

This is exactly right - provided you do it on a customer by customer basis,
ensuring that they understand what is involved. I have clients who, while
they would love to remove spam, have a need to ensure delivery of all mail
and expect so.
Its just the blanket process of blocking across all accounts without
customer approval that I feel could be dangerous. IANAL also, but it pays to
be very careful in business.
