If the domain that is having "host unknown" problems is "snjj.co.uk" then
you will need to creat A records for that domain pointing to the server IP
address and then an MX record pointing to the hostname you defined in the A
record.
The problem is that there is no host out there called "snjj.co.uk". If you
try to ping that hostname you will get no answers.
When you do all above then you will find the hostname in
/etc/mail/local-hostnames.
compare these dnsReports for your two domains:
snjj.co.uk

http://dnsreport.com/tools/dnsreport.ch?domain=snjj.co.uk
justinj.co.uk
=========
http://dnsreport.com/tools/dnsreport.ch?domain=justinj.co.uk
