We've added a lot of customization to Plesk servers. For a few things
we've used Plesk's Technical Services department to do the work (at
$150/hour). Others we've managed ourselves.

Don't know anything about Ensim; like you, I've heard that it can't be
done. I can't seem to get any information from Ensim's sales team,
although I've tried. Maybe you'll have better luck.
Yes, all easily doable with Plesk.

It's pretty secure with Plesk... the mail account is _not_ a linux user,
so all you can do if you get someone's password is read her/his email.
