Ok, a little digging for that one. Experimenting is fun, I found out two
ways. First way, is to put your forced domain in, then save it, in the
interface. Shell into the machine, go to /etc/mail and do a "grep
domain-name.com *" and it will tell you what file it is in. In your case it
will show up in sendmail.cf in the following set of lines.
# who I masquerade as (null for no masquerading) (see also $=M)
Dmdomain-name.com
The second, and boring way, is to pick up the O'Reilly sendmail book and
look through it, the bit about masquerading can be found on page 252 section
19.4.4 (Plus a lot of other spots)

PS: You'll probably have to do something like restart the mail server to
make it read in the new configuration file. But be careful, the cobalt has
a tendency to overwrite things you change when you do it from the file, so
make sure it is in the interface screen and in the file. Hopefully one of
them will decide to work properly.
