Contents of resolv.conf :

search <my servers hostname here>
nameserver 217.199.171.4
nameserver 217.199.171.5

The IP addresses there aren't mine or related to the server. The server
is it's own nameserver. Do I need to change this file, to the primary
and secondary DNS IPs that this server answers on?

I got Michal from Solarspeed to fix the problem with mail. Somehow
sendmail.cf had got corrupt, and that's all it was..  I don't have to
add individual sites into the 'relay for domains' on the Control Panel,
which is correct as the manual (PDF) says you needn't.

Now it's OK I think I'll leave resolv.conf alone. But thanks for the
suggestion, and I'd be interested in knowing what that file does :)
