Technically you could firewall out incoming connections to port 25 or with
sendmail you can also set the DaemonOptions to not allow incoming requests
from anything other than localhost
in sendmail.cf:
O DaemonPortOptions=Port=smtp,Addr=127.0.0.1, Name=MTA
Still allow outgoing mail from requests generated locally to 127.0.0.1.
