They should, as long as you either reboot your server, or reboot or
restart the logging daemon.
If you don't reboot or restart the files will no longer be available but
they'll continue to grow.

Other than the old data not being available, I don't know of any.
Log-rotate should do this as well, automatically, at 4 am.
