In /etc/mail/access you can add, (below the custom changes line),
cn
There is also a huge list of IP blocks for China.
http://dmoz.org/Computers/Internet/Abuse/Spam/Blacklists/ has a good
list of resources.
http://www.okean.com/chinacidr.txt or http://www.okean.com/china.txt
e.g. you would simply add:
61.48[tab]REJECT
61.49[tab]REJECT
etc. based on the listings.

See news:news.admin.net-abuse.email or use the groups.google.com to
search it. There is a blackholes list that can run via Sendmail to
reject specific countries.
